Quick banana muffins — a great way to use ripe bananas.

Ingredients

  • 1 cup sugar
  • 1 cup butter
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 2-3 bananas

Steps

  1. Cream together sugar and butter.
  2. Add eggs, then dry ingredients.
  3. Add mashed bananas and beat well.
  4. Place in greased muffin tins or paper muffin cups in muffin pan.
  5. Bake 350 degrees for 18 minutes.

Notes

  • Can freeze if made into bread.
