- 1 1/2 tsp active dry yeast
- 1/2 tsp sugar
- 1 cup warm water (105-115 degrees)
- 2 1/3 cup unbleached flour
- 1 tsp kosher salt
- 1 1/2 tsp olive oil, divided
- Cornmeal for dusting
Steps
- In a 2 cup liquid measure, dissolve yeast and sugar in warm water.
- Let stand until foamy, about 3-5 minutes.
- Insert dough blade in work bowl and add flour, salt and 1 teaspoon olive oil.
- With the machine running on dough speed, pour liquid through small feed tube as fast as flour will absorb it.
- Process until dough cleans sides of work bowl and forms a ball.
- Process for 30 seconds to knead dough. Dough will be slightly sticky.
- Coat dough evenly with 1/2 teaspoon olive oil; transfer to a plastic food storage bag and seal the top.
- Let rise in a warm place for about 45 minutes.
- While dough is rising, prepare any pizza toppings.
- Preheat pizza stone on upper shelf of oven at 500 degrees for 30 min.
- Place dough on a lightly floured surface and punch down.
- Roll into desired crust sizes.
- Place on cornmealed wooden peel.
- Put pizza toppings on. Whole milk Mozzarella cheese best.
- Slide pizza unto pizza stone. Alternative: cornmeal dusted cookie sheet.
- Bake till top browned, 10-13 min.
Notes
- Keep toppings dry; keep liquids to a minimum to keep crust not soggy.
