Basic yeast pizza dough for homemade pizza.

Ingredients

  • 1 1/2 tsp active dry yeast
  • 1/2 tsp sugar
  • 1 cup warm water (105-115 degrees)
  • 2 1/3 cup unbleached flour
  • 1 tsp kosher salt
  • 1 1/2 tsp olive oil, divided
  • Cornmeal for dusting

Steps

  1. In a 2 cup liquid measure, dissolve yeast and sugar in warm water.
  2. Let stand until foamy, about 3-5 minutes.
  3. Insert dough blade in work bowl and add flour, salt and 1 teaspoon olive oil.
  4. With the machine running on dough speed, pour liquid through small feed tube as fast as flour will absorb it.
  5. Process until dough cleans sides of work bowl and forms a ball.
  6. Process for 30 seconds to knead dough. Dough will be slightly sticky.
  7. Coat dough evenly with 1/2 teaspoon olive oil; transfer to a plastic food storage bag and seal the top.
  8. Let rise in a warm place for about 45 minutes.
  9. While dough is rising, prepare any pizza toppings.
  10. Preheat pizza stone on upper shelf of oven at 500 degrees for 30 min.
  11. Place dough on a lightly floured surface and punch down.
  12. Roll into desired crust sizes.
  13. Place on cornmealed wooden peel.
  14. Put pizza toppings on. Whole milk Mozzarella cheese best.
  15. Slide pizza unto pizza stone. Alternative: cornmeal dusted cookie sheet.
  16. Bake till top browned, 10-13 min.

Notes

  • Keep toppings dry; keep liquids to a minimum to keep crust not soggy.
