Dense, rich muffins with poppyseeds and a hint of almond.

Ingredients

  • 2 cups all-purpose flour
  • 3 tsp poppy seeds
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 cup plain yogurt
  • 1 tsp vanilla extract or 1/2 tsp almond extract

Steps

  1. In small bowl, stir together flour, poppy seeds, salt and baking soda.
  2. In large bowl, cream together sugar and butter.
  3. Beat in eggs, one at a time.
  4. Beat in yogurt and vanilla until well blended.
  5. Stir in flour mixture until moistened thoroughly.
  6. Spoon batter into greased muffin tins.
  7. Bake at 400 degrees for 15-20 min or until a wooden pick inserted in center comes out clean.
  8. Cool muffins on wire rack for 5 minutes before serving.
