Yeasted Belgium waffles with beaten egg whites — risen dough makes them extra light.
Ingredients
- 1 pkg yeast
- 2 cups warm milk (100-110 degrees; do not use skim or dry milk)
- 2 eggs, separated
- 2 1/2 cups of flour
- 1/2 tsp salt
- 1 tbsp sugar
- 1 tsp vanilla
- 1/2 cup melted butter
Steps
- Sprinkle yeast over warmed milk.
- Let yeast soften for 5 min.
- Beat egg whites till soft peaks; save aside.
- Add egg yolks to milk/yeast mixture; whisk together.
- Combine flour, salt and sugar.
- Add to milk mixture and beat together.
- Add vanilla then melted butter and beat till smooth on low speed.
- Fold in beaten egg whites.
- Let rise in warmed oven till doubled; covered with saran wrap or wet dish towel.
- Pour into greased waffle iron and bake.
