Yeasted Belgium waffles with beaten egg whites — risen dough makes them extra light.

Ingredients

  • 1 pkg yeast
  • 2 cups warm milk (100-110 degrees; do not use skim or dry milk)
  • 2 eggs, separated
  • 2 1/2 cups of flour
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1 tsp vanilla
  • 1/2 cup melted butter

Steps

  1. Sprinkle yeast over warmed milk.
  2. Let yeast soften for 5 min.
  3. Beat egg whites till soft peaks; save aside.
  4. Add egg yolks to milk/yeast mixture; whisk together.
  5. Combine flour, salt and sugar.
  6. Add to milk mixture and beat together.
  7. Add vanilla then melted butter and beat till smooth on low speed.
  8. Fold in beaten egg whites.
  9. Let rise in warmed oven till doubled; covered with saran wrap or wet dish towel.
  10. Pour into greased waffle iron and bake.
