Shrimp and smoked gouda omelets with chili oil and fresh dill.
Ingredients
Each Omelette:
- 2 eggs, beaten with 1 Tbsp cream
- salt/pepper
Filling for 2 omelets:
- 1 handful cooked shrimp, chopped
- 2 tsp hot chili oil (make it up!)
- 2 green onion, chopped
- 1/4 chopped red pepper, optional
- 1/2 tsp dill
- 1/3 cup heavy cream
- 1/2 cup smoked gouda cheese, grated
- 2 Tbsp chopped fresh parsley
Steps
- Heat oil in nonstick skillet, add shrimp and green onions.
- Warm it up good.
- Add heavy cream and boil it down a bit then add cheese and fresh parsley.
- Set aside.
- Spray oil non stick skillet.
- Pour in center of pan beaten egg/cream mixture.
- Sprinkle with salt/pepper.
- Stir around eggs a bit to get wet down to bottom of skillet.
- Put on lid for a bit till egg about cooked.
- Pour 1/2 filling down center.
- Put on lid a bit to warm up.
- Fold over eggs unto filling and slide onto a plate.
