Shrimp and smoked gouda omelets with chili oil and fresh dill.

Ingredients

Each Omelette:

  • 2 eggs, beaten with 1 Tbsp cream
  • salt/pepper

Filling for 2 omelets:

  • 1 handful cooked shrimp, chopped
  • 2 tsp hot chili oil (make it up!)
  • 2 green onion, chopped
  • 1/4 chopped red pepper, optional
  • 1/2 tsp dill
  • 1/3 cup heavy cream
  • 1/2 cup smoked gouda cheese, grated
  • 2 Tbsp chopped fresh parsley

Steps

  1. Heat oil in nonstick skillet, add shrimp and green onions.
  2. Warm it up good.
  3. Add heavy cream and boil it down a bit then add cheese and fresh parsley.
  4. Set aside.
  5. Spray oil non stick skillet.
  6. Pour in center of pan beaten egg/cream mixture.
  7. Sprinkle with salt/pepper.
  8. Stir around eggs a bit to get wet down to bottom of skillet.
  9. Put on lid for a bit till egg about cooked.
  10. Pour 1/2 filling down center.
  11. Put on lid a bit to warm up.
  12. Fold over eggs unto filling and slide onto a plate.
