A moist apple cake loaded with fresh apples and warm spices.
Ingredients
- 3 cups flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 2 cups sugar
- 3 eggs
- 1 1/4 cups vegetable oil
- 1 tsp vanilla
- 1/4 cup orange juice
- 2 cups grated unpared apples
- 1 cup chopped walnuts
- 1 cup flaked coconut
Topping:
- 1 cup sugar
- 1/2 c butter
- 1/2 tsp baking soda
- 1/2 c buttermilk
Steps
- Sift flour, baking soda and cinnamon onto waxed paper.
- Combine sugar, eggs, oil, vanilla and orange in a large bowl.
- Beat with mixer until well blended.
- Stir in flour mixture until well mixed.
- Fold in apples, walnuts and coconut.
- Spoon into a well greased and floured 10 x 4" angel cake pan.
- Bake 325 for 1 1/2 hours or until top springs back when touched.
- Cool and pan 15 min and then remove and place on plate with a raised edge.
- Puncture top of cake all over with wooden pick.
- Spoon Hot buttermilk sauce over warm cake several times until cake absorbs most of it.
- Let stand 1 hour before serving.
- Combine sugar, butter, baking soda and buttermilk in med sauce pan.
- Cook, stirring constantly over med heat until mixture comes to boiling.
