A moist apple cake loaded with fresh apples and warm spices.

Ingredients

  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 cups sugar
  • 3 eggs
  • 1 1/4 cups vegetable oil
  • 1 tsp vanilla
  • 1/4 cup orange juice
  • 2 cups grated unpared apples
  • 1 cup chopped walnuts
  • 1 cup flaked coconut

Topping:

  • 1 cup sugar
  • 1/2 c butter
  • 1/2 tsp baking soda
  • 1/2 c buttermilk

Steps

  1. Sift flour, baking soda and cinnamon onto waxed paper.
  2. Combine sugar, eggs, oil, vanilla and orange in a large bowl.
  3. Beat with mixer until well blended.
  4. Stir in flour mixture until well mixed.
  5. Fold in apples, walnuts and coconut.
  6. Spoon into a well greased and floured 10 x 4" angel cake pan.
  7. Bake 325 for 1 1/2 hours or until top springs back when touched.
  8. Cool and pan 15 min and then remove and place on plate with a raised edge.
  9. Puncture top of cake all over with wooden pick.
  10. Spoon Hot buttermilk sauce over warm cake several times until cake absorbs most of it.
  11. Let stand 1 hour before serving.
  12. Combine sugar, butter, baking soda and buttermilk in med sauce pan.
  13. Cook, stirring constantly over med heat until mixture comes to boiling.
