Bananas flambeed in butter, brown sugar, and rum, served over vanilla ice cream.

Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup golden brown sugar
  • 2 tbsp fresh lemon juice
  • 2 cinnamon sticks (or just 1/4 tsp ground cinnamon)
  • 2 ripe bananas, peeled, halved lengthwise, then crosswise
  • 1/4 cup triple sec or other orange liqueur
  • 1 tbsp dark rum
  • 1 tsp ground cinnamon
  • 3 tbsp orange juice
  • Vanilla Ice Cream

Steps

  1. Melt butter in heavy large skillet over medium-high heat.
  2. Add brown sugar, lemon juice, and cinnamon sticks and boil 2 min, stirring frequently.
  3. Add bananas.
  4. Remove from heat.
  5. Add triple sec, dark rum, and ground cinnamon.
  6. Carefully ignite.
  7. When flames subside, add orange juice and stir to combine.
  8. Discard cinnamon sticks.
  9. Scoop ice cream into bowls or balloon wineglasses.
  10. Spoon bananas and sauce over and serve.
