A self-saucing chocolate cake where boiling water poured over the batter creates its own pudding layer.

Ingredients

Batter:

  • 1 cup pancake mix (or 1 cup flour plus 2 tsp baking power)
  • 1/2 c sugar
  • 1 egg
  • 1/2 c milk
  • 1/2 tsp vanilla
  • 1/2 c melted butter

Topping:

  • 1/2 c sugar
  • 1/4 c cocoa

Steps

  1. Mix together batter.
  2. Place batter into lightly greased 8x8 pan.
  3. Sprinkle topping on batter.
  4. Pour 2 cups boiling water on top of batter.
  5. Bake 375 for 30 min.

Notes

  • May add nuts or raisins to topping.
