Rolled cookies with a sweet date and walnut filling, sliced and baked.

Ingredients

Filling:

  • 1 lb dates, chopped fine
  • 1 cup nuts
  • 1/2 cup sugar
  • 1/2 cup water

Dough:

  • 1 cup shortening
  • 2 cup brown sugar
  • 1 tsp vanilla
  • 3 eggs
  • 1 tsp soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 cup flour

Steps

  1. Cook dates, water and sugar until thick.
  2. Add nuts.
  3. Cream shortening and sugar.
  4. Add vanilla and eggs, beat.
  5. Add soda, salt, baking powder and about 2 cups flour together.
  6. Add enough flour to make soft dough.
  7. Roll out on floured board.
  8. Spread with date mixture.
  9. Roll like a jello roll.
  10. Chill 4 hours or overnight.
  11. Slice 1/4 inch thick and bake in 350 degrees oven 8 minutes.
