Rolled cookies with a sweet date and walnut filling, sliced and baked.
Ingredients
Filling:
- 1 lb dates, chopped fine
- 1 cup nuts
- 1/2 cup sugar
- 1/2 cup water
Dough:
- 1 cup shortening
- 2 cup brown sugar
- 1 tsp vanilla
- 3 eggs
- 1 tsp soda
- 1/2 tsp salt
- 1 tsp baking powder
- 2 cup flour
Steps
- Cook dates, water and sugar until thick.
- Add nuts.
- Cream shortening and sugar.
- Add vanilla and eggs, beat.
- Add soda, salt, baking powder and about 2 cups flour together.
- Add enough flour to make soft dough.
- Roll out on floured board.
- Spread with date mixture.
- Roll like a jello roll.
- Chill 4 hours or overnight.
- Slice 1/4 inch thick and bake in 350 degrees oven 8 minutes.
