A frozen margarita-flavored pie with a pretzel or graham crust.
Ingredients
Crust:
- 2 1/3 oz pretzels, about 2 cups
- 1 tbsp sugar
- 2 tbsp reduced-calorie margarine
- 2 tbsp limeade concentrate
Filling:
- 6 oz frozen concentrate limeade, slightly thawed
- 4 cups light vanilla ice cream
- 1 1/2 oz tequila, about 3 tbsp
- 1/2 oz orange-flavored liqueur like Triple Sec, 1 tbsp
- 1 tsp lime zest
Steps
- Preheat oven to 375 degrees.
- In food processor or blender, crush pretzel twists until crumbly.
- Add sugar and mix until combined.
- Add margarine and mix well.
- Add 2 tbsp of the limeade concentrate and mix well.
- Place mixture in an ungreased 9-inch pie plate and press firmly into bottom and up sides with back of spoon to form pie shell.
- Bake at 375 degrees until set, about 5 min.
- Place in freezer for 10 minutes to cool.
- Meanwhile, in a clean bowl, combine ice cream, remaining limeade concentrate, tequila and liqueur and mix until just blended.
- Spoon into cooled pie shell and sprinkle with lime zest.
- Freeze for 2 hours before cutting into 8 slices.
