A frozen margarita-flavored pie with a pretzel or graham crust.

Ingredients

Crust:

  • 2 1/3 oz pretzels, about 2 cups
  • 1 tbsp sugar
  • 2 tbsp reduced-calorie margarine
  • 2 tbsp limeade concentrate

Filling:

  • 6 oz frozen concentrate limeade, slightly thawed
  • 4 cups light vanilla ice cream
  • 1 1/2 oz tequila, about 3 tbsp
  • 1/2 oz orange-flavored liqueur like Triple Sec, 1 tbsp
  • 1 tsp lime zest

Steps

  1. Preheat oven to 375 degrees.
  2. In food processor or blender, crush pretzel twists until crumbly.
  3. Add sugar and mix until combined.
  4. Add margarine and mix well.
  5. Add 2 tbsp of the limeade concentrate and mix well.
  6. Place mixture in an ungreased 9-inch pie plate and press firmly into bottom and up sides with back of spoon to form pie shell.
  7. Bake at 375 degrees until set, about 5 min.
  8. Place in freezer for 10 minutes to cool.
  9. Meanwhile, in a clean bowl, combine ice cream, remaining limeade concentrate, tequila and liqueur and mix until just blended.
  10. Spoon into cooled pie shell and sprinkle with lime zest.
  11. Freeze for 2 hours before cutting into 8 slices.
