A moist oatmeal cake with a broiled brown sugar, coconut, and nut frosting.

Ingredients

  • 1-1/4 cups boiling water
  • 1 cup quick oats
  • 1 stick margarine or butter
  • 2 eggs
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 cups flour

Frosting:

  • 6 tablespoons butter
  • 1 cup brown sugar
  • 1/4 cup evaporated milk
  • 1 cup coconut
  • 1 teaspoon vanilla
  • 1 cup chopped nuts

Steps

  1. Pour boiling water over quick oats and margarine or butter.
  2. Set aside for 20 minutes.
  3. Preheat oven to 350 degrees F.
  4. Combine eggs, sugars, spices, salt, and flour.
  5. Add oatmeal mixture.
  6. Bake for 30 minutes or until toothpick inserted into cake emerges clean.
  7. If using frosting, combine all frosting ingredients and spread on warm cake.
  8. Broil for 1-1/2 to 2-1/2 minutes.

Notes

  • Recipe came from a neighbor who lived across from the family house in Lincoln.
  • Can substitute frosting with a small amount of whip cream on each piece of cake.
