A moist oatmeal cake with a broiled brown sugar, coconut, and nut frosting.
Ingredients
- 1-1/4 cups boiling water
- 1 cup quick oats
- 1 stick margarine or butter
- 2 eggs
- 1 cup brown sugar
- 1 cup white sugar
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1-1/2 cups flour
Frosting:
- 6 tablespoons butter
- 1 cup brown sugar
- 1/4 cup evaporated milk
- 1 cup coconut
- 1 teaspoon vanilla
- 1 cup chopped nuts
Steps
- Pour boiling water over quick oats and margarine or butter.
- Set aside for 20 minutes.
- Preheat oven to 350 degrees F.
- Combine eggs, sugars, spices, salt, and flour.
- Add oatmeal mixture.
- Bake for 30 minutes or until toothpick inserted into cake emerges clean.
- If using frosting, combine all frosting ingredients and spread on warm cake.
- Broil for 1-1/2 to 2-1/2 minutes.
Notes
- Recipe came from a neighbor who lived across from the family house in Lincoln.
- Can substitute frosting with a small amount of whip cream on each piece of cake.
