A classic Southern peach cobbler with a buttery biscuit topping.
Ingredients
- 3lb can of sliced peaches, reserve 1 cup liquid
- 3/4 cup sugar
- 3/4 tsp cinnamon
Batter:
- 3/4 cup butter or oleo
- 1/4 cup shortening
- 2 large eggs
- 1 1/2 cup sugar
- 1 3/4 cup flour
Steps
- In a 9x13" greased pan, put in peaches with 1 cup liquid.
- Combine sugar and cinnamon and sprinkle over peaches.
- Melt together oleo and shortening.
- In another bowl, beat together eggs, sugar, flour and melted oils.
- Pour batter over peaches and work quickly for it will stiffen.
- Bake 325 degrees for 1 hr then 425 for 10 min till golden brown.
