A classic Southern peach cobbler with a buttery biscuit topping.

Ingredients

  • 3lb can of sliced peaches, reserve 1 cup liquid
  • 3/4 cup sugar
  • 3/4 tsp cinnamon

Batter:

  • 3/4 cup butter or oleo
  • 1/4 cup shortening
  • 2 large eggs
  • 1 1/2 cup sugar
  • 1 3/4 cup flour

Steps

  1. In a 9x13" greased pan, put in peaches with 1 cup liquid.
  2. Combine sugar and cinnamon and sprinkle over peaches.
  3. Melt together oleo and shortening.
  4. In another bowl, beat together eggs, sugar, flour and melted oils.
  5. Pour batter over peaches and work quickly for it will stiffen.
  6. Bake 325 degrees for 1 hr then 425 for 10 min till golden brown.
