Traditional Italian waffle cookies made with a pizelle iron.

Ingredients

  • 1 lb butter
  • 3 cups brown sugar (1 lb box)
  • 3 cups white sugar
  • 9 eggs
  • 1 tbsp vanilla
  • 1/4 tsp salt
  • 7 cups flour

Steps

  1. Cream butter, add sugar and mix well.
  2. Add eggs, vanilla, salt and beat.
  3. Add 2 cups flour at a time, mixing well until all flour is added.
  4. Drop by teaspoons onto pizelle iron.
  5. Cook until golden brown and remove immediately.
  6. Cool on rack.

Notes

  • Whiskey may be added if desired (1 tablespoon).
  • If batter is too thin, add a little flour but do not make a stiff batter.
