Traditional Italian waffle cookies made with a pizelle iron.
Ingredients
- 1 lb butter
- 3 cups brown sugar (1 lb box)
- 3 cups white sugar
- 9 eggs
- 1 tbsp vanilla
- 1/4 tsp salt
- 7 cups flour
Steps
- Cream butter, add sugar and mix well.
- Add eggs, vanilla, salt and beat.
- Add 2 cups flour at a time, mixing well until all flour is added.
- Drop by teaspoons onto pizelle iron.
- Cook until golden brown and remove immediately.
- Cool on rack.
Notes
- Whiskey may be added if desired (1 tablespoon).
- If batter is too thin, add a little flour but do not make a stiff batter.
