Oatmeal crumb bars layered with fresh rhubarb and a sweet cornstarch glaze.

Ingredients

Topping:

  • 1 cup flour
  • 1 cup brown sugar
  • 3/4 cup oatmeal
  • 1 tsp cinnamon
  • 1/2 cup melted oleo
  • 4 cups thinly sliced rhubarb
  • 1 cup sugar
  • 1 cup water
  • 1 tsp vanilla
  • 2 tbsp cornstarch

Steps

  1. Combine flour, brown sugar, oatmeal, cinnamon and oleo.
  2. Press 1/2 of it in greased pan.
  3. Pour uncooked rhubarb on top of these crumbs.
  4. Combine sugar, water, vanilla and cornstarch in a saucepan and cook till thick.
  5. Pour over rhubarb/oatmeal mixture in pan.
  6. Top with remaining crumbs.
  7. Bake at 350 degrees for 1 hour.
