Oatmeal crumb bars layered with fresh rhubarb and a sweet cornstarch glaze.
Ingredients
Topping:
- 1 cup flour
- 1 cup brown sugar
- 3/4 cup oatmeal
- 1 tsp cinnamon
- 1/2 cup melted oleo
- 4 cups thinly sliced rhubarb
- 1 cup sugar
- 1 cup water
- 1 tsp vanilla
- 2 tbsp cornstarch
Steps
- Combine flour, brown sugar, oatmeal, cinnamon and oleo.
- Press 1/2 of it in greased pan.
- Pour uncooked rhubarb on top of these crumbs.
- Combine sugar, water, vanilla and cornstarch in a saucepan and cook till thick.
- Pour over rhubarb/oatmeal mixture in pan.
- Top with remaining crumbs.
- Bake at 350 degrees for 1 hour.
