A simple cream cake studded with fresh rhubarb and topped with cinnamon sugar.
Ingredients
- 1 cup sugar (remove 2 Tbsp sugar and add 1 tsp cinnamon for topping)
- 1 1/4 cup flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 tsp vanilla
- 1 cup cream or evaporated milk
- 2 cups thinly sliced rhubarb
Steps
- Mix all dry ingredients together.
- Add 1 cup cream or evaporated milk and also 2 cups of thinly sliced rhubarb and mix together with dry ingredients.
- Pour into greased cake pan.
- Bake cake 45 minutes (375 degrees) till about done.
- Remove from oven and sprinkle the sugar and cinnamon that you saved back on the cake.
- Serve topped with whipped cream if desired.
