A simple cream cake studded with fresh rhubarb and topped with cinnamon sugar.

Ingredients

  • 1 cup sugar (remove 2 Tbsp sugar and add 1 tsp cinnamon for topping)
  • 1 1/4 cup flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla
  • 1 cup cream or evaporated milk
  • 2 cups thinly sliced rhubarb

Steps

  1. Mix all dry ingredients together.
  2. Add 1 cup cream or evaporated milk and also 2 cups of thinly sliced rhubarb and mix together with dry ingredients.
  3. Pour into greased cake pan.
  4. Bake cake 45 minutes (375 degrees) till about done.
  5. Remove from oven and sprinkle the sugar and cinnamon that you saved back on the cake.
  6. Serve topped with whipped cream if desired.
