Bourbon-glazed chicken strips wrapped in a tortilla.
Ingredients
Chicken Marinade:
- 1 cup soy sauce
- 1/2 cup pineapple juice
- 1/2 cup bourbon whiskey (4 oz)
- 2 tbsp Tabasco brand pepper sauce (1oz)
- 2 1/4 lb boneless skinless chicken breast
Tabasco Flavored Bourbon Sauce:
- 2 cups bourbon whiskey (16 oz)
- 2 tbsp Mayo
- 6 tbsp Sour Cream
- 3 tbsp Tabasco
For Assembly:
- 3/4 cup Tabasco Bourbon Sauce
- 12 flour tortilla 12" diameter
- 6 cups Red bean and Rice Mix
- 1 3/4 cup minced onion
- 4 tbsp chopped fresh parsley
Steps
- To prepare chicken marinade, combine soy sauce, pineapple juice, bourbon and Tabasco brand pepper sauce.
- Marinate the chicken for 15 minutes.
- Grill chicken and cut into strips. Hold warm.
- In medium saucepan reduce 2 cups bourbon to 2 1/2 oz. Cool and set aside.
- Combine Mayo, sour cream and Tabasco. Add bourbon reduction. Hold chilled.
- For each serving spread 3/4 of one tortilla with 1 tbsp of Tabasco Bourbon Sauce.
- Top with 1/2 cup of Tabasco Red Bean and Rice Mix, 1 tbsp of onion, 2 1/2 oz of chicken and 1 tsp of chopped parsley.
- Roll up tightly, ending with the uncovered portion of the tortilla.
Notes
- I use any red bean/rice mix.
