Whole chicken brined in salt, sugar, and aromatics for incredible juiciness.

Ingredients

  • 1 cut up bird with skin on and each breast cut in 2
  • 1/3 cup kosher salt
  • 5 cups cold water
  • 3 tbsp sugar
  • 1 bay leaf
  • 4-6 juniper berries
  • 4 strips of lemon zest (optional)

Steps

  1. Check bag label to make sure chicken isn’t already in a salt solution.
  2. Brine in frig 2-4 hours in ziplock or bowl with chicken weighed down.
  3. After rinsing and drying chicken, you can add a spice rub and grill.
  4. Bake or cook as desired.

  • I use this for every chicken application with or without sugar.
