Whole chicken brined in salt, sugar, and aromatics for incredible juiciness.
Ingredients
- 1 cut up bird with skin on and each breast cut in 2
- 1/3 cup kosher salt
- 5 cups cold water
- 3 tbsp sugar
- 1 bay leaf
- 4-6 juniper berries
- 4 strips of lemon zest (optional)
Steps
- Check bag label to make sure chicken isn’t already in a salt solution.
- Brine in frig 2-4 hours in ziplock or bowl with chicken weighed down.
- After rinsing and drying chicken, you can add a spice rub and grill.
- Bake or cook as desired.

- I use this for every chicken application with or without sugar.
