Baby back ribs brined overnight, then slow-grilled with barbecue sauce.

Ingredients

Brine:

  • 1 cup kosher salt
  • 1/2 cup sugar
  • 4 quarts water
  • 4lb baby back or loin back ribs

Spice Rub:

  • 1 Tbsp plus 1/2 tsp sweet paprika
  • 1 1/2 tsp chili powder
  • 1 3/4 tsp ground cumin
  • 1 1/2 tsp dark brown sugar
  • 3/4 tsp table salt or 1 1/2 tsp kosher salt
  • 3/4 tsp dried oregano
  • 3/4 tsp ground black pepper
  • 1 tsp ground white pepper
  • 1/2 tsp cayenne pepper

Steps

  1. Submerge ribs in brine and refrigerate 1 hr until fully seasoned.
  2. Remove ribs, rinse and pat dry.
  3. Apply spice rub and refrigerate 30 min.
  4. Gas grill indirect heat (leave one burner on and other off-place ribs on off side) with water soaked wood chips about 275 degrees for 4 hours.
  5. May or may not want barbeque sauce.

Notes

  • I barely use more salt since it’s brined.
  • I start out in the grill for the smokey flavor and finish off in the oven in foil at 325 degrees for 1 1/2-2 hours.
