Baby back ribs brined overnight, then slow-grilled with barbecue sauce.
Ingredients
Brine:
- 1 cup kosher salt
- 1/2 cup sugar
- 4 quarts water
- 4lb baby back or loin back ribs
Spice Rub:
- 1 Tbsp plus 1/2 tsp sweet paprika
- 1 1/2 tsp chili powder
- 1 3/4 tsp ground cumin
- 1 1/2 tsp dark brown sugar
- 3/4 tsp table salt or 1 1/2 tsp kosher salt
- 3/4 tsp dried oregano
- 3/4 tsp ground black pepper
- 1 tsp ground white pepper
- 1/2 tsp cayenne pepper
Steps
- Submerge ribs in brine and refrigerate 1 hr until fully seasoned.
- Remove ribs, rinse and pat dry.
- Apply spice rub and refrigerate 30 min.
- Gas grill indirect heat (leave one burner on and other off-place ribs on off side) with water soaked wood chips about 275 degrees for 4 hours.
- May or may not want barbeque sauce.
Notes
- I barely use more salt since it’s brined.
- I start out in the grill for the smokey flavor and finish off in the oven in foil at 325 degrees for 1 1/2-2 hours.
