A classic old family recipe for fried chicken, finished in the oven for a crispy outside and juicy inside.

Ingredients

  • 1 chicken, cut up
  • 2-3 eggs, well beaten
  • Salt and pepper
  • Flour
  • 3-4 Tbsp oil

Steps

  1. Combine flour, salt and pepper in a shallow dish.
  2. Salt the chicken pieces.
  3. Roll chicken into flour mixture, then dip in beaten eggs.
  4. Fry in hot oiled skillet (3-4 Tbsp oil) till brown. Turn and brown the other side.
  5. Transfer to a roaster and add approximately 3 Tbsp of water.
  6. Bake covered at 350°F for about an hour.
