A classic old family recipe for fried chicken, finished in the oven for a crispy outside and juicy inside.
Ingredients
- 1 chicken, cut up
- 2-3 eggs, well beaten
- Salt and pepper
- Flour
- 3-4 Tbsp oil
Steps
- Combine flour, salt and pepper in a shallow dish.
- Salt the chicken pieces.
- Roll chicken into flour mixture, then dip in beaten eggs.
- Fry in hot oiled skillet (3-4 Tbsp oil) till brown. Turn and brown the other side.
- Transfer to a roaster and add approximately 3 Tbsp of water.
- Bake covered at 350°F for about an hour.
