Butterflied leg of lamb marinated in lemon, garlic, and herbs, then grilled.

Ingredients

  • 1 leg of lamb, butterflied
  • 1 bottle soy sauce
  • 1 small bottle honey
  • 5 to 6 cloves garlic, chopped
  • Small onion chopped
  • 1/2 cup brandy
  • Salt and pepper

Dry Spice Rub:

  • 2 tbsp ground cumin
  • 2 tbsp curry powder
  • 2 tbsp chili powder
  • 1 tbsp ground allspice
  • 1 tbsp ground black pepper
  • 1 tsp ground cinnamon

Citrus-Cilantro wet spice rub:

  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp ground coriander
  • 1 tbsp juice from 1 orange
  • 1 1/2 tsp juice from 1 lime
  • 1 1/2 tsp extra-virgin olive oil
  • 1 small garlic clove, minced
  • 1 tbsp minced fresh cilantro

Steps

  1. Pour soy sauce, honey, garlic, onion, brandy, salt and pepper together in a bowl and mix well.
  2. Place lamb in a 9 x 12 pan and pour marinade over meat.
  3. Turn periodically (can also place in large plastic bag).
  4. Marinade at least 1/2 a day.
  5. Grill on medium heat until medium done (about 45 min or so).
  6. Slice and serve.

Notes

  • Gather around grill and drink beer and wine while cooking.
  • Been making this every summer for years.
