Butterflied leg of lamb marinated in lemon, garlic, and herbs, then grilled.
Ingredients
- 1 leg of lamb, butterflied
- 1 bottle soy sauce
- 1 small bottle honey
- 5 to 6 cloves garlic, chopped
- Small onion chopped
- 1/2 cup brandy
- Salt and pepper
Dry Spice Rub:
- 2 tbsp ground cumin
- 2 tbsp curry powder
- 2 tbsp chili powder
- 1 tbsp ground allspice
- 1 tbsp ground black pepper
- 1 tsp ground cinnamon
Citrus-Cilantro wet spice rub:
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp ground coriander
- 1 tbsp juice from 1 orange
- 1 1/2 tsp juice from 1 lime
- 1 1/2 tsp extra-virgin olive oil
- 1 small garlic clove, minced
- 1 tbsp minced fresh cilantro
Steps
- Pour soy sauce, honey, garlic, onion, brandy, salt and pepper together in a bowl and mix well.
- Place lamb in a 9 x 12 pan and pour marinade over meat.
- Turn periodically (can also place in large plastic bag).
- Marinade at least 1/2 a day.
- Grill on medium heat until medium done (about 45 min or so).
- Slice and serve.
Notes
- Gather around grill and drink beer and wine while cooking.
- Been making this every summer for years.
