Mike’s personal spaghetti sauce recipe with Italian sausage.
Ingredients
Ground beef and/or Italian sausage
Onion, chopped
Garlic, 3-4 cloves minced
Tomatoes and/or tomato paste and/or tomato juice
Salt, to taste
Basil (fresh or dry)
Small amount of olive oil
Red wine or water
Mushrooms, sliced (optional)
Carrots, grated (optional)
Sweet bell pepper, red or yellow (optional)
Steps
Add a small amount of olive oil to a sauce pan.
Fry the meat, onion, and garlic very well. This step is critical to the recipe.
Later in frying process, add red wine or water as required to keep meat from sticking to the bottom of the pan.
After the meat is cooked well, add remaining ingredients and bring to a boil.
Lower the heat and allow to simmer for at least 3/4 to 1 hour.
Notes
A lean pork roast is a good substitute for ground meat. However, the cooking time for the meat must be extended. The spaghetti and sauce become a side-dish to the roast pork.
This recipe came from Maria Toto, who emigrated from Italy and maintained their Italian language and customs within their new Canadian home.
