Classic porcupine meatballs — the rice pokes out like little quills as they cook. A simple family dinner from the Suedmeier cookbook.
Ingredients
- 1 lb ground beef
- 1/2 cup rice, uncooked
- 1/2 cup evaporated milk
- 2 Tbsp onion, chopped
- Salt and pepper
- 1 (8 oz) can tomato sauce
Steps
- Mix ground beef, rice, evaporated milk, onion, salt and pepper together.
- Form into meatballs.
- Place meatballs in a baking dish. Pour tomato sauce over the top.
- Bake covered at 350°F for about 45 minutes, until rice is cooked through.
Notes
- The uncooked rice absorbs liquid as it bakes, poking through the surface of the meatballs — that’s where the name comes from.
