Classic porcupine meatballs — the rice pokes out like little quills as they cook. A simple family dinner from the Suedmeier cookbook.

Ingredients

  • 1 lb ground beef
  • 1/2 cup rice, uncooked
  • 1/2 cup evaporated milk
  • 2 Tbsp onion, chopped
  • Salt and pepper
  • 1 (8 oz) can tomato sauce

Steps

  1. Mix ground beef, rice, evaporated milk, onion, salt and pepper together.
  2. Form into meatballs.
  3. Place meatballs in a baking dish. Pour tomato sauce over the top.
  4. Bake covered at 350°F for about 45 minutes, until rice is cooked through.

Notes

  • The uncooked rice absorbs liquid as it bakes, poking through the surface of the meatballs — that’s where the name comes from.
