A simple Italian-American lemon and white wine roasted chicken from Rao’s restaurant.

Ingredients

  • 2 (2 1/2 - 3 lbs) broiling chickens, halved

Lemon Sauce:

  • 2 cups lemon juice
  • 1 cup olive oil
  • 1 tbsp red wine vinegar
  • 1 1/2 tsp minced garlic
  • 1/2 tsp dried oregano
  • 1/4 cup chopped parsley

Steps

  1. Preheat broiler for at least 15 min.
  2. Broil chicken halves, turning once for about 30 min (if chicken is cut up, cook less).
  3. Remove chicken.
  4. Using a very sharp knife, cut each half into six pieces: leg (cut off foot), thigh (2 pieces), wing and 3 pieces of breast.
  5. Place chicken on pan with sides.
  6. Pour lemon sauce over, toss to coat.
  7. Return chicken to broiler and broil 3 minutes.
  8. Turn each piece and broil 1 min.
  9. Remove chicken to platter.
  10. Pour sauce into a heavy sauce pan and stir in parsley.
  11. Boil 1 min.
  12. Pour sauce over chicken and serve with lots of crusty bread to soak up the sauce.
