A simple Italian-American lemon and white wine roasted chicken from Rao’s restaurant.
Ingredients
- 2 (2 1/2 - 3 lbs) broiling chickens, halved
Lemon Sauce:
- 2 cups lemon juice
- 1 cup olive oil
- 1 tbsp red wine vinegar
- 1 1/2 tsp minced garlic
- 1/2 tsp dried oregano
- 1/4 cup chopped parsley
Steps
- Preheat broiler for at least 15 min.
- Broil chicken halves, turning once for about 30 min (if chicken is cut up, cook less).
- Remove chicken.
- Using a very sharp knife, cut each half into six pieces: leg (cut off foot), thigh (2 pieces), wing and 3 pieces of breast.
- Place chicken on pan with sides.
- Pour lemon sauce over, toss to coat.
- Return chicken to broiler and broil 3 minutes.
- Turn each piece and broil 1 min.
- Remove chicken to platter.
- Pour sauce into a heavy sauce pan and stir in parsley.
- Boil 1 min.
- Pour sauce over chicken and serve with lots of crusty bread to soak up the sauce.
