A rich meat sauce with Italian sausage, ground beef, and tomatoes.
Ingredients
Chop fine in food processor:
- 2 medium onions
- 1/2 cup carrots
- 8-10 cloves garlic, according to taste
Sauce:
- 3/4 cup olive oil
- 2 1/2 lbs ground meat or 3 lbs bone in meat
- 1 gallon (6 lb 9oz) Hunt’s Tomato Sauce
- 1 tsp black pepper
- Salt to taste
- Water as needed (or substitute chicken broth)
Steps
- Prep vegetables separately in food processor.
- Heat olive oil in large, deep pot.
- Add all vegetables and cook till translucent and beginning to lightly brown on medium heat.
- Add chopped meats and brown well.
- Add tomato sauce, water, black pepper and salt.
- Cook over low boil adding water to your desired consistency.
- Cook until oil that comes to top is brownish, approximately 1 1/2 hour.
- If sauce tastes tomato acidic, add 1/2-1 tsp sugar.
- Freeze or process in pressure canner.
Notes
- May use any combination of these meats: Beef short ribs, stew meat, roast, pork chops, Italian sausage, hamburger.
- You can pressure cook tough meats first to cut cooking time, chop for sauce, and use reserved broth without fat for additional juice.
