A rich meat sauce with Italian sausage, ground beef, and tomatoes.

Ingredients

Chop fine in food processor:

  • 2 medium onions
  • 1/2 cup carrots
  • 8-10 cloves garlic, according to taste

Sauce:

  • 3/4 cup olive oil
  • 2 1/2 lbs ground meat or 3 lbs bone in meat
  • 1 gallon (6 lb 9oz) Hunt’s Tomato Sauce
  • 1 tsp black pepper
  • Salt to taste
  • Water as needed (or substitute chicken broth)

Steps

  1. Prep vegetables separately in food processor.
  2. Heat olive oil in large, deep pot.
  3. Add all vegetables and cook till translucent and beginning to lightly brown on medium heat.
  4. Add chopped meats and brown well.
  5. Add tomato sauce, water, black pepper and salt.
  6. Cook over low boil adding water to your desired consistency.
  7. Cook until oil that comes to top is brownish, approximately 1 1/2 hour.
  8. If sauce tastes tomato acidic, add 1/2-1 tsp sugar.
  9. Freeze or process in pressure canner.

Notes

  • May use any combination of these meats: Beef short ribs, stew meat, roast, pork chops, Italian sausage, hamburger.
  • You can pressure cook tough meats first to cut cooking time, chop for sauce, and use reserved broth without fat for additional juice.
