A versatile spice rub paste for grilling pork or fish.
Ingredients
- 1 cup mayonnaise
- 2 tbsp lime juice
- 2 tbsp chopped fresh cilantro
- 2 cloves of minced garlic
- 1 tsp chipotle chili powder
- 8 pork chops or fish fillets
Steps
- Blend first five ingredients together.
- Reserve 1/2 cup of the mixture and set aside.
- Grill or broil pork or fish, brushing with 1/2 cup mixture, until done.
- Serve with the reserved 1/2 cup.
