A versatile spice rub paste for grilling pork or fish.

Ingredients

  • 1 cup mayonnaise
  • 2 tbsp lime juice
  • 2 tbsp chopped fresh cilantro
  • 2 cloves of minced garlic
  • 1 tsp chipotle chili powder
  • 8 pork chops or fish fillets

Steps

  1. Blend first five ingredients together.
  2. Reserve 1/2 cup of the mixture and set aside.
  3. Grill or broil pork or fish, brushing with 1/2 cup mixture, until done.
  4. Serve with the reserved 1/2 cup.
