A thick, punchy vinaigrette loaded with garlic and Dijon mustard.

Ingredients

  • 4 large cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1/2 cup red wine vinegar (or for variety balsamic)
  • 1 cup extra virgin olive oil
  • Salt and fresh ground black pepper to taste

Steps

  1. Combine garlic, mustard, and vinegar in a small bowl and whisk well.
  2. Slowly drizzle in the olive oil, whisking constantly until the dressing is quite thick.
  3. Season with salt and pepper.
  4. Pour in vinaigrette jar.

Notes

  • Alternative method: Dump it all in a Tupperware container with a lid and shake well.
  • Can also be used as base for pasta salad with whatever you want to throw in with the pasta.
