Red potato salad with fresh dill, Dijon mustard, and a creamy mayonnaise dressing.
Ingredients
- 1/2 of 5 lb bag of red potatoes
- 1 med chopped onion
- 2 tbsp chopped fresh dill
- 1 cup mayonnaise
- 1/4 cup Dijon mustard
- 2 tbsp vinegar
- 1 tbsp sugar
- milk to thin
- salt and pepper to taste
Steps
- In a large stock pot bring potatoes to a boil.
- Cook until when poked with a fork are about half done.
- Remove from heat and put lid on pot. Check every 5-10 minutes until just cooked through but still firm.
- Drain water and let cool.
- When potatoes are cool cut into cubes. Place in a large bowl with chopped onions and dill.
- In separate bowl whisk together mayonnaise, mustard, vinegar, sugar and enough milk to thin to batter consistency.
- Pour over potatoes and onions and stir.
- Chill in frig.
