Red potato salad with fresh dill, Dijon mustard, and a creamy mayonnaise dressing.

Ingredients

  • 1/2 of 5 lb bag of red potatoes
  • 1 med chopped onion
  • 2 tbsp chopped fresh dill
  • 1 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 2 tbsp vinegar
  • 1 tbsp sugar
  • milk to thin
  • salt and pepper to taste

Steps

  1. In a large stock pot bring potatoes to a boil.
  2. Cook until when poked with a fork are about half done.
  3. Remove from heat and put lid on pot. Check every 5-10 minutes until just cooked through but still firm.
  4. Drain water and let cool.
  5. When potatoes are cool cut into cubes. Place in a large bowl with chopped onions and dill.
  6. In separate bowl whisk together mayonnaise, mustard, vinegar, sugar and enough milk to thin to batter consistency.
  7. Pour over potatoes and onions and stir.
  8. Chill in frig.
