Whole wheat macaroni salad with chicken, apples, pecans, arugula, and gorgonzola.
Ingredients
- 8 oz whole wheat macaroni
- 1 cup diced red pepper
- 1 cup diced Granny Smith apples
- 3 Tablespoons toasted pecans
- 1/3 cup reduced fat sour cream
- 1 tablespoon low-fat mayo
- 2 tablespoon champagne vinegar
- 3/4 tsp salt
- 2 cups arugula salad
- 1/4 cup gorgonzola cheese
Steps
- Cook pasta and drain.
- Add pepper and apple.
- Combine sour cream and next 3 ingredients (mayo, vinegar, salt). May thin with skim milk if needed.
- Stir until blended.
- Pour over macaroni mixture, tossing to coat.
- Stir in arugula, and sprinkle with cheese.
