Whole wheat macaroni salad with chicken, apples, pecans, arugula, and gorgonzola.

Ingredients

  • 8 oz whole wheat macaroni
  • 1 cup diced red pepper
  • 1 cup diced Granny Smith apples
  • 3 Tablespoons toasted pecans
  • 1/3 cup reduced fat sour cream
  • 1 tablespoon low-fat mayo
  • 2 tablespoon champagne vinegar
  • 3/4 tsp salt
  • 2 cups arugula salad
  • 1/4 cup gorgonzola cheese

Steps

  1. Cook pasta and drain.
  2. Add pepper and apple.
  3. Combine sour cream and next 3 ingredients (mayo, vinegar, salt). May thin with skim milk if needed.
  4. Stir until blended.
  5. Pour over macaroni mixture, tossing to coat.
  6. Stir in arugula, and sprinkle with cheese.
