Quick egg pasta dough mixed in the food processor.

Ingredients

  • 1 1/2 cup unbleached flour
  • 1 tsp salt
  • 2 large eggs, beaten lightly
  • 2 large egg yolks
  • 2 tsp olive oil

Steps

  1. Put flour and salt in Food Processor bowl with metal blade.
  2. Combine liquid ingredients and add to running food processor.
  3. It will form a ball. If too wet add flour 1 tbsp at a time, processing after each addition.
  4. Process dough 40 seconds to knead it.
  5. Remove dough and wrap in plastic and let it rest for 30 minutes.
  6. Roll out and cut with pasta machine or roll thinly (1/16") and cut into thin strips.
  7. Add flour to strips to keep from sticking together.
  8. Bring large amount salted water to a boil.
  9. Add noodles and cook till al dente, approximately 1-3 minutes after coming to a boil. Don’t overcook.

Notes

  • May cook at this point or let strips air dry over a rack.
  • Can add lots of flour to strips and place 1 cup uncooked at a time in a plastic container and freeze. To cook, let set out on counter 15 minutes then cook in boiling water.
