Italian potato gnocchi shaped by hand and served with sauce.

Ingredients

  • 4 cups boiling water
  • Pinch of salt
  • 4 cups instant mashed potatoes
  • 3 large eggs
  • 4 cups flour

Steps

  1. Bring water to a boil in a sauce pan. Add instant potatoes and stir until well blended.
  2. Set aside to cool slightly.
  3. Beat eggs together. Add to room temperature potatoes and slowly add flour until all 4 cups are incorporated in dough.
  4. Roll sections of dough out into a rope-like design and cut rope into 1/2 inch slices. Add additional flour to keep dough from sticking to cutting board.
  5. Bring large pot of salted water to a boil.
  6. Add gnocchi to boiling water. Boil until gnocchi floats to the top. Cut one open to test doneness.
  7. Drain well and serve with spaghetti sauce topped with cheese.
