Italian potato gnocchi shaped by hand and served with sauce.
Ingredients
4 cups boiling water
Pinch of salt
4 cups instant mashed potatoes
3 large eggs
4 cups flour
Steps
Bring water to a boil in a sauce pan. Add instant potatoes and stir until well blended.
Set aside to cool slightly.
Beat eggs together. Add to room temperature potatoes and slowly add flour until all 4 cups are incorporated in dough.
Roll sections of dough out into a rope-like design and cut rope into 1/2 inch slices. Add additional flour to keep dough from sticking to cutting board.
Bring large pot of salted water to a boil.
Add gnocchi to boiling water. Boil until gnocchi floats to the top. Cut one open to test doneness.
Drain well and serve with spaghetti sauce topped with cheese.
