Creamy Arborio rice risotto finished with tomato sauce and Parmesan.

Ingredients

  • 1 pound sausage
  • 1 can tomato paste
  • 2 tomato paste cans of water
  • 1 cup rice
  • 1 can chicken broth
  • Parmesan cheese, grated

Steps

  1. Brown sausage over medium heat.
  2. Do not drain.
  3. Add tomato paste and 2 cans of water.
  4. Stir until mixed well.
  5. Cover and simmer over medium low heat for 1 1/2 hr, stirring occasionally.
  6. Add rice and chicken broth.
  7. Cover and simmer until rice is done (approx 20 min) and sauce is absorbed.
  8. Serve topped with grated cheese.
