Creamy Arborio rice risotto finished with tomato sauce and Parmesan.
Ingredients
- 1 pound sausage
- 1 can tomato paste
- 2 tomato paste cans of water
- 1 cup rice
- 1 can chicken broth
- Parmesan cheese, grated
Steps
- Brown sausage over medium heat.
- Do not drain.
- Add tomato paste and 2 cans of water.
- Stir until mixed well.
- Cover and simmer over medium low heat for 1 1/2 hr, stirring occasionally.
- Add rice and chicken broth.
- Cover and simmer until rice is done (approx 20 min) and sauce is absorbed.
- Serve topped with grated cheese.
