Baked herb stuffing and spinach balls with Parmesan — a Christmas Eve tradition.
Ingredients
- 1/3 cup butter
- 1 small onion, chopped (about 1/4-1/2 cup)
- 1 pkg (10 oz) chopped spinach, drained well and squeezed dry
- 1 cup crumbled herb stuffing mix
- 1/4 cup grated Parmesan cheese
- 2 eggs, well beaten
- 3/4 tsp leaf thyme
- Salt
- Pepper
Steps
- Saute onion in butter till translucent.
- Add remaining ingredients in a bowl and mix well.
- Shape into 1 1/2 inch balls.
- Cover and chill if desired.
- Bake at 350-375 degrees till browned, approximately 20 minutes.

- We make this every year for Christmas Eve with ham balls and oyster stew. Green, red and white.
