Baked herb stuffing and spinach balls with Parmesan — a Christmas Eve tradition.

Ingredients

  • 1/3 cup butter
  • 1 small onion, chopped (about 1/4-1/2 cup)
  • 1 pkg (10 oz) chopped spinach, drained well and squeezed dry
  • 1 cup crumbled herb stuffing mix
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, well beaten
  • 3/4 tsp leaf thyme
  • Salt
  • Pepper

Steps

  1. Saute onion in butter till translucent.
  2. Add remaining ingredients in a bowl and mix well.
  3. Shape into 1 1/2 inch balls.
  4. Cover and chill if desired.
  5. Bake at 350-375 degrees till browned, approximately 20 minutes.

  • We make this every year for Christmas Eve with ham balls and oyster stew. Green, red and white.
