A rich baked spinach casserole with Swiss cheese, sour cream, and a splash of sherry.
Ingredients
- 4 (10 oz) pkg frozen chopped spinach
- 1 1/2 cup sour cream
- 1 (8 oz) pkg cream cheese, softened
- 2 cups Swiss cheese, grated (may use any white cheese, Monterey Jack, Mozzarella, Pepper Jack)
- 2 tsp salt
- 2 tsp pepper
- 1 tsp dill weed
- 2 tbsp chopped, diced onion
- 1 tsp granulated garlic
- 1/4 cup sherry
- 1 tsp dried thyme
Topping:
- 1/2 cup cheddar/Colby cheese, grated
- Parmesan cheese
Steps
- Cook spinach and drain well.
- Mix together other ingredients (except topping cheese) and add cooked spinach.
- Place in greased 13x9 casserole dish and sprinkle with cheeses.
- Bake at 350 degrees for 30-50 minutes till bubbly and browned.
