A rich baked spinach casserole with Swiss cheese, sour cream, and a splash of sherry.

Ingredients

  • 4 (10 oz) pkg frozen chopped spinach
  • 1 1/2 cup sour cream
  • 1 (8 oz) pkg cream cheese, softened
  • 2 cups Swiss cheese, grated (may use any white cheese, Monterey Jack, Mozzarella, Pepper Jack)
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tsp dill weed
  • 2 tbsp chopped, diced onion
  • 1 tsp granulated garlic
  • 1/4 cup sherry
  • 1 tsp dried thyme

Topping:

  • 1/2 cup cheddar/Colby cheese, grated
  • Parmesan cheese

Steps

  1. Cook spinach and drain well.
  2. Mix together other ingredients (except topping cheese) and add cooked spinach.
  3. Place in greased 13x9 casserole dish and sprinkle with cheeses.
  4. Bake at 350 degrees for 30-50 minutes till bubbly and browned.
