Baked potatoes scooped, mashed with sour cream and cream cheese, then baked again with melted cheese.

Ingredients

  • 4 large potatoes (or 6 small)
  • 1/2 cup sour cream
  • 4 oz cream cheese
  • 1 tbsp garlic powder
  • 1 cup shredded cheese
  • 2 tbsp butter
  • Sea salt

Steps

  1. Cook potatoes whole, poked with fork, in covered microwavable bowl with a little water in bottom of bowl.
  2. When done microwaving, brush with melted butter and sprinkle generously with sea salt.
  3. Bake potatoes at 350 degrees for approximately 20 minutes or until outside skin of potato is crispy.
  4. Cut baked potato in half and scoop out middle, leaving about 1/8 inch potato around edge.
  5. Put insides of potatoes in mixing bowl and add sour cream, cream cheese, and garlic powder.
  6. Mix until well blended.
  7. Spoon potato mixture back into potato skins and sprinkle cheese on top.
  8. Return to oven until cheese melts and serve.
