Baked potatoes scooped, mashed with sour cream and cream cheese, then baked again with melted cheese.
Ingredients
- 4 large potatoes (or 6 small)
- 1/2 cup sour cream
- 4 oz cream cheese
- 1 tbsp garlic powder
- 1 cup shredded cheese
- 2 tbsp butter
- Sea salt
Steps
- Cook potatoes whole, poked with fork, in covered microwavable bowl with a little water in bottom of bowl.
- When done microwaving, brush with melted butter and sprinkle generously with sea salt.
- Bake potatoes at 350 degrees for approximately 20 minutes or until outside skin of potato is crispy.
- Cut baked potato in half and scoop out middle, leaving about 1/8 inch potato around edge.
- Put insides of potatoes in mixing bowl and add sour cream, cream cheese, and garlic powder.
- Mix until well blended.
- Spoon potato mixture back into potato skins and sprinkle cheese on top.
- Return to oven until cheese melts and serve.
