Slow-simmered pinto beans and pork roast served over corn chips with all the fixings.

Ingredients

  • 1 lb can pinto beans
  • 3 lb pork roast
  • 7 cups water
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp salt
  • 2 tbsp chili powder
  • 2 tbsp cumin
  • 1 tsp oregano
  • 1 4-oz can chopped green chiles, or more

Toppings:

  • Corn chips
  • Lettuce
  • Cheese
  • Tomato
  • Avocado
  • Taco sauce
  • Onion

Steps

  1. Combine beans, pork roast, water, onion, garlic, salt, chili powder, cumin, oregano, and green chiles in dutch oven or crock pot.
  2. Simmer 5 hours, uncovered for the last 1/2 hour.
  3. Spoon off oil.
  4. Tear up pork roast into bite size pieces.
  5. Serve over corn chips and top with lettuce, cheese, tomato, avocado, taco sauce, and onion.
