Slow-simmered pinto beans and pork roast served over corn chips with all the fixings.
Ingredients
- 1 lb can pinto beans
- 3 lb pork roast
- 7 cups water
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tbsp salt
- 2 tbsp chili powder
- 2 tbsp cumin
- 1 tsp oregano
- 1 4-oz can chopped green chiles, or more
Toppings:
- Corn chips
- Lettuce
- Cheese
- Tomato
- Avocado
- Taco sauce
- Onion
Steps
- Combine beans, pork roast, water, onion, garlic, salt, chili powder, cumin, oregano, and green chiles in dutch oven or crock pot.
- Simmer 5 hours, uncovered for the last 1/2 hour.
- Spoon off oil.
- Tear up pork roast into bite size pieces.
- Serve over corn chips and top with lettuce, cheese, tomato, avocado, taco sauce, and onion.
