Wild duck braised in orange juice, soy sauce, and ginger.

Ingredients

  • 1 — 2 lb duck or 4 teal ducks
  • 2 oranges
  • 1/2 teaspoon thyme
  • 1/4 cup red wine
  • Salt & Pepper to taste

Steps

  1. Grill (gas or charcoal) duck to brown skin.
  2. Put duck into baking bag.
  3. Squeeze 1 orange over duck and put into cavity of duck.
  4. Slice other orange.
  5. Pour wine over duck.
  6. Sprinkle duck with thyme.
  7. Place orange slices over the duck.
  8. Bake in oven at 350 degrees until duck is tender (approximately 2 hours) or cook in crock pot until tender (approximately 5 hours on low).

Notes

  • Can broil duck instead of grilling to brown skin.
