A hearty chili made with venison or wild boar, black beans, and smoky spices.

Ingredients

  • 1/2 cup cooking oil
  • 4 yellow onions, diced medium
  • 6 jalapeno peppers, deseeded and fine diced
  • 3 tbsp chili powder
  • 2 tbsp cumin, ground
  • 1 tbsp thyme, dried
  • 1 tsp oregano, dried
  • 1 tsp celery seed
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp anise seed
  • 1/2 tsp cayenne
  • pinch ground cloves
  • 4 bay leaves
  • 4 pounds wild game meat, ground or cubed
  • 2 cups red chili sauce
  • 1 quart beef stock or beef broth
  • 5 cups black beans, cooked (or 2 1/2 cups uncooked)

Steps

  1. In a large pot, saute onion and peppers in oil over medium heat until soft.
  2. Add spices and saute for several minutes longer.
  3. Add meat and cook until lightly browned.
  4. Add chili sauce and bring pot to a boil.
  5. Add enough beef broth to barely cover the ingredients and bring to a boil again.
  6. Lower heat and simmer for 2 1/2 to 3 hours, stirring every half hour.
  7. Add beans and season to taste with salt and pepper.

Notes

  • Garnish with grated sharp cheddar or jack cheese and chopped red onion.
