A hearty chili made with venison or wild boar, black beans, and smoky spices.
Ingredients
- 1/2 cup cooking oil
- 4 yellow onions, diced medium
- 6 jalapeno peppers, deseeded and fine diced
- 3 tbsp chili powder
- 2 tbsp cumin, ground
- 1 tbsp thyme, dried
- 1 tsp oregano, dried
- 1 tsp celery seed
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp anise seed
- 1/2 tsp cayenne
- pinch ground cloves
- 4 bay leaves
- 4 pounds wild game meat, ground or cubed
- 2 cups red chili sauce
- 1 quart beef stock or beef broth
- 5 cups black beans, cooked (or 2 1/2 cups uncooked)
Steps
- In a large pot, saute onion and peppers in oil over medium heat until soft.
- Add spices and saute for several minutes longer.
- Add meat and cook until lightly browned.
- Add chili sauce and bring pot to a boil.
- Add enough beef broth to barely cover the ingredients and bring to a boil again.
- Lower heat and simmer for 2 1/2 to 3 hours, stirring every half hour.
- Add beans and season to taste with salt and pepper.
Notes
- Garnish with grated sharp cheddar or jack cheese and chopped red onion.
